Well, as for realistically goes. That is the point of a castle to allow a smaller force to withstand a larger force. The best an army of 50,000 could do is starve a castle to surrender, which often happened or build seige weapons and lose a large number of forces to go over the walls or through them, often falling victim to the castles death defenses. I agree, once the wall was breached it was all over. Also, trickle forces happened as other lords sent support troops to try and break the castle blockade. Also forces fought outside the walls to drive the enemy back.
The game follows this in spirit by giving the defender the stronger advantages and allows support to be sent to that castle.
I think the better option is to add new troops like seige towers and catapults. Let them reduce the effectiveness of the castle walls by reducing the bonus gained by the walls, eventually reducing it to zero and then the troops inside would be overrun.
Ex:
Castle walls at max you get 100% defense bonus. And let's say as long as you have X number of catapults left each round the castle walls would reduce by 5%. In twenty rounds the castle defenses would not be taken into account and forces storm the castle. Even with current system the lose of walls would drastically hinder the defense of the castle.
